Ingredients
Marinade
(1) juice of one lime
(2) 1 tbsp. honey
(3) 2 tbsp. olive oil
(4) 2 green chilies
(5) 1/2 cup cilantro
(6) 1 tsp. salt
(7) 1/4 tsp. black pepper
(8) 5-8 wooden skewers
Avocado Dip
(1) one avocado
(2) 3 scallions (chopped)
(3) 1 tbsp. red wine vinegar
(4) 1 tbsp. olive oil
(5) 1/2 cup low-fat sour cream
(6) salt, black pepper
(7) 1 tbsp. cilantro
Preparation
Chicken
(1) cut chicken into 1″ cubes
(2) add chicken to marinade,
refrigerate at least 1 hour
Dip
(1) Place avocado (stoned), scallions
vinegar, olive oil, sour cream in
food processor or blender – pulse
until smooth. Salt & pepper to
taste.
(2) cover, refrigerate 30 minutes
Here is another chicken dish that is extremely easy to make. In fact, last weekend it took us less than 20 minutes to make both the dip and marinade. Some excellent choices for a side dish include steamed brown rice, corn on the cob, and fresh tomatoes.
Make sure to use fresh cilantro and fresh green chilies. Also, it is very important that you soak the wooden skewers in cold water for about 30 minutes before using them on an open grill. The water will keep them from burning in the flames. When making the marinade, you may want to use slightly less cilantro, since it has such a strong flavor. This recipe makes enough marinade for 4 boneless chicken breast halves.
